Cauliflower
A cruciferous vegetable, cauliflower is formed of a mass of tiny, tightly-packed flower heads (known as curds). These flowers sprout from a thick central stem to form a single, round head. Cauliflower has found culinary fame being used as a ÔriceÕ alternative. Cauliflower is a source of anti-oxidants, high in choline and rich in sulforaphane.
